The first thing you need to know is there is 3 kinds
of vegetarians. At least these are the most popular.
Lacto ovo
vegetarian: They don’t eat any sort of meat (fish and chicken). But
their diet includes eggs and dairy products.
Lacto
vegetarian: As the word say, they consume dairy products and
avoid eggs.
Vegan: They
don’t eat any kind of animal product.
Basic tips
Legumes are your new best friend:
start to prepare plates that contains legumes as beans, lentils and chickpeas.
They are a really good fountain of vegetal proteins. Cooked them with a carbohydrate, to make it a complete protein. For example: rice or pasta. Besides there is plenty
ways of prepare them. Like hummus, hamburgers of lentils, salads and off course
the traditional way to do it (like a soup).
Anaemia: If you want to
prevent this disease you have to consume vegetables that contains iron. Most of
the vegetables are rich in iron but the problem is the absorption. Is easier
for your organism to absorbs the animal iron. But don’t worry about it. The
solution is very simple. Add some vitamin c (citrus fruits) and will improve
the absorption of iron. You can find iron in: algae, spinach, broccoli,
lentils, oats and tofu. The last thing you need to know is that the coffee and
the tea inhibit this process. So, remember never drink a coffee after lunch.
What to eat? the
vegetarian diet is based on fruits, vegetables, nuts and dried fruits, legumes
and plenty kinds of cereals. Prefer the integral versions of the cereals. The
key for being healthy is to keep a variety diet. Just in case you need more inspiration. I’m
going to let you a seven-meal plan to find delicious and creative recipes.
Where to find the b12? This vitamin is present in eggs
and dairy products. If you decided to keep vegan diet you may have to take a
supplement of b12. However, you can find some food fortified with this vitamin (like
soy milk).
